What is Matcha

Matcha is a high-quality, stone ground green tea often associated with Japanese tea ceremonies.

In Japan, matcha continued to be an important item at Zen monasteries, and later went on to become revered by others in the upper echelons of society during the 14th 15th and 16th centuries.

History of Matcha

Finely ground tea is thought to have first originated in China, with Buddhist monks. subsequently introducing this practice to Japan in the 12th Century.

In recent times, matcha has experienced an increase in world wide popularity due to its amazing health benefits and Umami (Japanese word for a particular distinctive pleasant taste).

What to look for when buying Matcha Tea

OriginThe best quality matcha usually comes from Japan. The regions of Uji in Kyoto and Nishio in Aichi Prefecture are known for producing high quality matcha.ColourMatcha that is bright green is better quality. The process of shading the leaves results in increased production of chlorophyll thus making the leaves a brighter shade of green. Lower quality matcha has more of a yellow or brownish colour.(Often due to less shading or older leaves).TasteHigh quality matcha has a good balance between natural sweetness and a slightly bitter and vegetal flavour and It feels smooth in the mouth. The full, sweet taste you experience on your tongue is Umami. In Japan Umami literally translates as "pleasant taste". Conversely low quality matcha has a more bitter taste and feels 'grainy' in the mouth.TextureHigh quality matcha is finely ground and looks and feels like a smooth, silky powder. Lower quality matcha is coarse and has larger particles.
